Ingredients
Ground Beef
Hotdogs
Bacon

Steps
1. Cover hotdogs with ground beef. This will take some molding, rolling, and removing of excess meat.
2. Then wrap in bacon.
3. Bake at 400 degrees until ground beef and bacon are cooked. Probably 40-60 mins.

If you want to make them a little fancier you can use ground buffalo, smoked sausages, and capicola slices but you will want to first wrap the sausage in capicola then cover with ground buffalo.

If you want to get really crazy you can insert a chopstick into the cooked meat log then dip in corndog batter and fry in canola oil to make a decadent corndog.  Here is a good corndog batter recipe that can be found online.

6 Cups pancake mix
2 cups yellow corn meal
2 eggs
Water

Shrimp Ceviche Salsa

Shrimp Ceviche Salsa

Ingredients 
Shrimp Ceviche Salsa1 lb. Medium Sized or Small cooked Shrimp (just get cooked shrimp even though people might complain that it’s not real ceviche)
2 Serrano Peppers finely chopped
3 Limes
6 Roma Tomatoes diced
1 Bunch of Cilantro finely chopped
1 Large Red Onion diced
Salt and Pepper

Steps 
1. Finely chop the serrano pepper and put into a large mixing bowl then squeeze one lime into the bowl and stir.
2. If using medium shrimp cut into quarters then add to the bowl and salt and pepper then stir.
3. Add the diced red onion and tomatoes and the juice from one more lime then stir.
4. Finally, add the chopped cilantro and the juice from the last lime and stir.


Serve with chips or tostadas with sour cream and tapatio sauce. Great to bring to parties. People will love you. Awesome party food.

Easy Chili

My husband saves leftover uncooked meat and freezes it for future chili days. Once he has enough he makes a really simple chili that is actually pretty good and different every time. People can be very specific about making chili so this might not be a recipe for everybody but it is easy, cheap, and fun. The spice powders can be bought for really cheap in the Hispanic sections in grocery stores. Comes in little bags for 48 cents or so.

Ingredients
Meat scraps or whatever kind of red meat you like if you decide to buy meat for this.
A large onion
5-10 garlic cloves
Peppers (anaheim, jalapenos, habanero, ghost, or whatever peppers you like or however spicy you want it)
Chili Powder
Cumin
Cheyenne
Salt
Pepper
Olive Oil
Water
And whatever spices you like or have lying around like nutmeg, ginger, pumpkin spice, cloves etc.
1 can whole peeled tomatoes (optional)
1 can tomato sauce (optional)
1 or 2 cans of beans (optional)

Steps 
1. In a large pot on high heat add a little olive oil just to coat the bottom of the pot.
2. Roughly slice onion and garlic and add to pot.
3. Once the onion and garlic are browned add the meat and some salt and pepper.
4. Once the meat is browned, add the whole peeled tomatoes, tomato sauce, and beans (optional).
5. Add enough water to cover all of the ingredients.
6. Once that all comes to a boil add half of the peppers sliced and add some spices, but know that you will be adding more spices and peppers in an hour or so.
7. Reduce heat to a very low boil and boil for 1 ½ to 2 hours.
8. About half way through add the rest of the peppers and spices. Maybe finely dice the peppers this time. 

Add more water periodically if it starts to boil off to much. 
Be sure to stir a lot so it doesn’t burn.
And open the window so your home doesn’t smell like chili too much.

I’ve seen my husband add all types of things that were going uneaten like whole heads of cauliflower, apples, pears, eggs, pork, chicken, buffalo, really almost anything as long as it gets cooked long enough and spiced right it seems to turn out great.

Strawberry Shortcake


Strawberry Shortcake

This is a super simple recipe that can be really perfect if enough love is put into it. It is just three parts layered and it is delicious year round.

Ingredients
Pie crust
Strawberries
Sugar
Heavy Whipping Cream

1. Wash and slice strawberries then put in a bowl. Using your hands or a potato masher, mash the strawberries until they are at a good consistency for topping. Add sugar to taste. Don’t worry about adding too much either. You might be surprised how much sugar you will want to add. Cover the mix and cool.

2. Bake crust until golden brown. You can either make your own crust or use store bought. Even the kind that comes in the disposable metal pan works too.

3. Whip the heavy whipping cream until soft peaks form being careful not to over whip and turn into butter because this recipe is best when using whipped cream that does not have sugar added to it.

4. In a bowl put down a little bit of crust, then top with strawberries, then top with whipped cream. The ratios are totally subject to individual tastes.

Easy Steak Sandwiches

Ingredients
Caramelized onions
Thin strips of red meat
Garlic
Cheese wiz or cheese dip
Bread (baguettes work well with this but so do hotdog buns)
Lettuce and tomatoes optional

How to make Caramelized Onions
Slice onions and place into a pan on medium heat. You can coat the pan with a little butter or olive oil but you don’t need to. Allow onions to cook as much as possible only stirring to avoid burning. Lower the heat if necessary, it will take a good amount of time to cook. Remember that the amount of onions will shrink to more than half and you will want an equal amount of caramelized onions and strips of red meat.  Once caramelized set aside and this step can be done up to a couple days before if you want to just have caramelized onions prepped.

Steps  
1. In a pan on medium heat add a little bit of olive oil and then mince some garlic cloves into the oil.
2. Add meat to the pan and brown, then add the caramelized onions and mix together.
3. Once the meat is cooked to the desired level remove from heat.
4. Spread cheese wiz or dip on bread and add lettuce and tomatoes if you want. Then add meat and onion mixture and that’s it!
